In 1994, Chef George Gallardo built Blue Agave Southwestern Grill Restaurant in the heart of Yorba Linda. To locals, it’s known as a “gem” of a restaurant.
George brought his special talent and own expertise of working for other national restaurant chains and his own love of the Southwest to create this concept. His dishes combine local flavors and favorites found throughout Mexico, South America and the American Southwest.

Blue Agave also features a full line of tequila and Margaritas and other spirits in their bar, very popular with the Yorba Linda locals. And they are known throughout Southern California for their catering.
