Blue Agave is known throughout Orange County and Southern California for catering. Our Catering menu includes delivery, set-up and break down of our equipment, and table décor in a Southwest theme. We provide plates, forks, spoons, knives, paper napkins and food containers with heating elements and serving utensils at no additional charge.


CATERING BUFFET MENU

Select 3 Entrées. Served with Texas Beans, Mexican Rice and Corn Cake, Chips, Salsa, and Guacamole. Groups of 30–1000. $11.95 per person*

Chicken, Cheese, Ancho-Cheese & Spinach, or Steak Enchiladas

Rolled corn tortilla filled with chicken, cheese or steak marinated in fresh tomatoes, green chilies, onions and spices, topped with Salsa de Tomatillos. Ancho-cheese enchiladas are filled with spinach and ancho-cheese, and topped with a chipotle cream sauce.

Southwestern Skewers

Grilled Chicken or Steak Skewers brushed with a ginger Serrano marinade. Served with an orange chipotle marmalade and mango relish. ADD $1 more per person for Steak Skewers.

Homemade Chicken or Beef Tamales

Corn husk stuffed with corn meal and chicken or beef steamed deliciously firm.

Carnitas

Braised pork wrapped in a banana leaf, cooked and served with fresh pico de gallo, guacamole, cilantro and tortillas.

Southwestern Taquitos

Blue, red and yellow corn tortillas filled with chicken, steak or pork, topped with sour cream and guacamole.

Tostada Bar

Corn tortilla shell stuffed with chicken. Topped with lettuce, cheese, pico de gallo, guacamole, sour cream and salsa.

Apache Chicken Breast

Grilled Chicken Breast topped with a light cream sauce of charred cilantro, tomato and onion.


Kiva Grill Fajitas Bar

This dish adds a dramatic presentation to your affair as our cook(s) prepare your fajitas with fresh red and green bell peppers, sautéed in onions over an open flame in a large skillet. Accompanied with Texas beans and Mexican rice, Pico de Gallo and Guacamole. Served with two selections from above buffet menu. $13.95 per person*
