CATERING BUFFET MENU
Select 3 Entrées. Served with Texas Beans, Mexican Rice and Corn Cake, Chips, Salsa, and Guacamole. Groups of 30–1000.
Chicken, Cheese, Ancho-Cheese & Spinach, or Steak Enchiladas
Rolled corn tortilla filled with chicken, cheese or steak marinated in fresh tomatoes, green chilies, onions and spices, topped with Salsa de Tomatillos. Ancho-cheese enchiladas are filled with spinach and ancho-cheese, and topped with a chipotle cream sauce.
Grilled Chicken or Steak Skewers brushed with a ginger Serrano marinade. Served with an orange chipolte marmalade and mango relish.
Homemade Chicken or Beef Tamales
Corn husk stuffed with corn meal and chicken or beef steamed deliciously firm.
Braised pork wrapped in a banana leaf, cooked and served with fresh pico de gallo, guacamole, cilantro and tortillas.
Blue, red and yellow corn tortillas filled with chicken, steak or pork, topped with sour cream and guacamole.
Corn tortilla shell stuffed with chicken. Topped with lettuce, cheese, pico de gallo, guacamole, sour cream and salsa.
Apache Chicken Breast
Grilled Chicken Breast topped with a light cream sauce of charred cilantro, tomato and onion.

This dish adds a dramatic presentation to your affair as our cook(s) prepare your fajitas with fresh red and green bell peppers, sauteed in onions over an open flame in a large skillet.
